There are as many croquette recipes as there are aromas in this wine, and everyone always believes the best ones are their mother’s or grandmother’s. So do we! Our mother’s cod croquettes. The smoothness of the bechamel sauce pairs with the salty cod to make a perfect snack for this Rosado Fermentado en Barrica.
Our Rosado Fermentado en Barrica is not a blend of red and white grapes. The Garnacha grape skins are macerated for a day and a night with the juice, and then the technique of “bleeding off” the tank is employed.
Once we have this bougainvillea pink-colored must, a little darker than our famous “claretes,” but with the same organoleptic characteristics, we fill the barrels where the alcoholic fermentation will take place, which makes our rosé very distinctive and special.
APPEARANCE: Bougainvillea-pink color, very characteristic in making “claretes” with Garnacha Tinta grapes, but leaving the skins in contact with the juice a little longer. Intense and complex.
NOSE: Very good intensity, where the primary fruit notes remind us of childhood aromas of red hard candies, peach gummy candies, and lollipops, with a background of fresh vegetation.
PALATE: Mirroring the nose, it is refreshing with lively acidity. It is easy drinking with light notes of blanched nuts intermingled with fruity notes of currant and wild strawberries. It has a sweet strawberry and cream hard candy finish, full-bodied and viscous.
The good weather conditions of 2021 definitely facilitated ripening and contributed to an outstanding vintage. The longer harvest period aided slow phenolic ripening and selective picking.
The 2021 vintage was synonymous with structure, color and, of course, Rioja’s unique complexity.
Both the whites and the rosés are marked by their excellent aromatic complexity, good freshness, and balanced acidity. Rosé wines continue the trend towards lighter colors and notes where floral aromas prevail. White wines, on the other hand, continue to surprise and gain a unique identification and personality.
